Hi
If I set a product "Require shipping" to "No" then only Pick up is possible. It should be possible to display this on checkout:
Same goes for any E-Mail sent to Customer or Admin. There it should be visible that the item will be picked up.
And on checkout there should bei the correct number of steps:

The title of Steps at checkout page can be changed under EShop -> System -> Translation. Please go there to change it as the way that you want.
