Hey,

is it possible to have a custom field at checkout, or already on the product page, where the customer has to fill in a text before he can checkout.
This feature should be only available for certain products.

Then you can use product option feature in EShop. Please read more about it here: eshopdocs.joomservices.com/catalog/products#product-options
