I don't need the product images in my shop is there anyway of hiding them?

Yes the product all look the same and there are no images of them they are just plain books and pretty boring.

Before you do this I have been thinking that I might consider replacing the the image with an icon that works for all the books but in this case is it possible to reduce the image size and remove the zoom function. Is this possible as my concern with changing the layout is that once this has been done my client might come back with books they do want images of.

Yes I think this is a great idea.
So you just need to prepare your icon/image file and replace the file at media\com_eshop\products\no-image.png
This file will be used for all products in your system.
I can help you to reduce the image size and remove zoom function from product details page. It is much easier.

OK I think my image is going to be 128x128. Just in case they want the zoom feature in the future is it possible to add a radio button in the data section of products to allow you to turn the zoom feature on and off basically 'Allow image zooming'?

128 x 128 is fine. In the configuration of EShop, you only have option to use zoom feature or view product in popout window, you can not turn these features off. Please go to Configuration, under images tab, you will see it.
