Ability to edit fields that display on Manage Registrants

I would like to be able to pick what fields show on the Manage Registrants form.

If I understand your requirement correctly, you can go to Events Booking -> Custom Fields, click on the field to edit, set Show on Registrants Management to Yes and it will be shown on Registrants Management

I think I didn't state that very clearly. I am referring to the Registrants List (see attached). I don't see a way to edit what fields show on that screen. If, for example, I wanted to not show Registrants and Registration Date but would rather see Deposit Amount and Due Amount in their place. That is what I meant. I don't think I can control those fields can I?

No, those are not custom fields and could not be controlled. If you want to remove or change position of these fields, you need to edit code

The file you need to look at is components/com_eventbooking/themes/default/registrants/default.php
