where can I change the colour settings of the price. You can see the price now on the right side with colour "white" and highlight "blue" HERE

Your template is setting this color and behaviour.
You'll have to write some new CSS to override it. Go to [Event Booking -> Configuration -> Custom CSS tab] and try adding:
Tweak the color to whatever you'd like. #006dcc is the color of blue that you're seeing when you mouse-over the price at present.
