I want to sell letters online, is it possible for the program to allow customers to edit sections of the document at the purchasing stage in a form.

I am sorry but It is not possible to have this feature . Maybe you can ask customers to provide information of how they want to modify the document on order form .

If you start looking at pdftk you will actually be able to do this stuff...
You can have a PDF with form fields, which you can merge with an xml file (with the information from the form fields) and create a new PDF file...
