The confirmation emails received received by registrants look so bad/unprofesional because I cant format their registration selections contained in the [MEMBER_DETAIL] tag.
At the very lease is there a way to have vertical spacing between each registration item and bold the field name on the left ?

That tag is just a simple HTML table tag. You can see the code at components/com_eventbooking/view/emailtemplates/tmpl/email_group_member_detail.php and change it if needed
