I could not see this in the documentation. I see DOCman for example you can.

Sorry for the lack of info.
I would like the document upload/storage folder/diectory to be configured one below the public html folder on the server for security reasons. For example our Akeeba backups are stored there as well as Virtuemart "safe path" where it stores the invoices and downloadable products.
In DOCman you can configure the storage/upload folder/directory with an absolute path to move the folder below http root.
Is that possible with you guys?

In Edocman Configuration, we have field: Document Path which allow you to setup the storage/upload folder/directory in any places on your server. You just need to enter the Real Path to the folder that you want to use as document storage on your server.
In additional, all direct accesses to documents in storage folder will be denied. User can only access to documents (view, download) through Edocman tasks.
