My last item under Articles is "Default Menu Item (English (UK))" with a select box with all the menus.
Is this the correct option? in this case which is the option I choose?

Just choose one. Then it will work. When you test you will see it will work.

I have tried several options and it seems the cart page works but I get any product because the product page the button "add to cart" does not appear

Did you check this:
Please go to Eshop - System - Configuration - Options - Articles
The catalog mode should be set to "No" to have the "Add to cart" button.

Sorry, sorry, sorry ... I just realized that the client had created the products but in quantity had "0" and, of course, you can not add to cart a product that there is not one in stock.

But there is one option, that you can add to cart with 0 or negative stock.

Now just want to get to the point of adding products to the cart because the client wants to sell and bill for other routes.
The problem is I do not know if it is saved in the database products are in the shopping cart of a buyer.
You may be saved in a particular table or there is no way to stay registered products in the shopping cart?

I've consulted by ticket but can take up to 24 hours and is a very urgent issue

Hi,

I am not sure, but I think there are two way this can be done:
1) Customer has to create an account and then products will be save to this account.
2) Cookies!. But I am not sure about this.
Maybe you can test with an account? To see what happens?
