Removing a 'Not Required' Option Category from a Product?

Wondering how to remove the appearance of an option category from a product, once it has been added from the dropdown box of available option categories. All I can manage is to say "Required - No'' but on the product page the 'not-required' option category still shows.

I am assuming the product is too buggy to be fixed. I ended up deleting the listed product and building it from scratch, just to remove the unneeded option category from being listed.

Now I see that the Eshop cart has its own bugs, whereby items cannot be removed from the cart. The banner will says the items have been removed, even though they stay on the page. When I refresh the page they alternately disappear and reappear. I may have to search for a workable product if I cannot get any support.
