is there a way to check how many coupons of a specific type have already been used?
I see where to set the max number of times a coupon can be used by a single user but I do not see how many times it has already been used.

You are correct, currently OS Services Booking doesn't store number times that coupon is used. In next OS Services Booking version, we will add this improvement.
