I would like to have a payment option added for donors to mail or check... it would just redirect to a page with the mailing address. I *think* I can figure this out in time, but can you help me get started?

I think the simplest way is that you add the message at the top of donation form to let donors know about that .

I would like it to be a payment option and have the amount count toward the total for that campaign - they would be pledging to send the money.

The other option is that when you receive donations from offline payment, you can create a donation record manually from back-end. Joom Donation has this feature and I think It will work for you .
